The Chardonnay grapes were picked early to ensure a balance of ripeness and fruit aromatics. Following crushing and pressing the juice was cold settled and cold fermented. The extended controlled fermentation helped retain natural fruit flavours with the added benefit of a portion (30%) being barrel aged and recombined to build the flavor profile. After fermentation the wine was blended, cold stabilized, filtered, and bottled to retain freshness.
Colour: Light to medium yellow-green
Bouquet: Ripe Chardonnay citrus and melon fruit aromatics are enhanced with the added dimension of creamy yeast and secondary fermentation characters.
Palate: Soft creamy fruit flavours are supported by well integrated French oak and a balanced youthful finish
Cellaring: This wine is delicious to drink now but will benefit from bottle age up to 4 years
