Both the Cabernet Sauvignon and Shiraz grapes were picked from individual blocks at ripeness to capture optimum fruit flavours. Following harvest the grapes were crushed to small open fermenters and cold soaked prior to the onset of fermentation. The rack and return procedure was used daily to gently turn the ferments over the skins to extract flavour, colour and tannin.
Tasting Notes
A portion of the wine was matured in a combination of new and used French oak barriques prior to blending and bottling.
Colour: Deep red purple
Bouquet: Fresh juicy mixed berry aromas with mint and spice with oak overtones
Palate: The mixed berry, spice and mint carry through to the palate and combine to produce full rich flavours, mouthfeel and softness
Cellaring: 5 to 10 years
